The Tojiro Pro Nickel Damascus Chef's Knife (F-1032) is the premier 210 mm Gyuto in Tojiro's all-stainless lineup. It merges the brand's most advanced blade metallurgy with its most hygienic handle design. While the standard "Pro" series is utilitarian, this model elevates the tool to an art form, featuring a spectacular 63-layer Nickel Damascus blade. The addition of nickel to the outer layers creates a high-contrast, shimmering "ripple" pattern that is significantly more distinct than standard iron-based damascus, all while retaining the sanitary benefits of the integrated steel handle.
Engineered for Performance and Presentation
The blade is constructed with a hard VG10 (Cobalt Alloy) core for razor-sharp cutting performance. This core is sandwiched between 63 alternating layers of high and low-nickel stainless steel. This multi-layered forging process increases the density of the steel structure, improving toughness and stability.
The handle utilizes Tojiro's 18-8 Stainless Steel "monocoque" (hollow) design, which balances the knife perfectly at 175 g—light enough for agility, but heavy enough to let the blade do the work. The "Tornado" groove pattern ensures a secure grip even in wet or oily conditions.
