The Iconic Standard: The Tojiro DP Cobalt Alloy Chef's Knife
The Tojiro F-808 (often known globally as the "Tojiro DP") is arguably the most famous Japanese chef's knife in the world for its price-to-performance ratio. Unlike the "Pro" series which uses a hollow metal handle, this "Classic" model features a traditional Western-style handle with a full tang, giving it a solid, reassuring weight in the hand. Winner of the prestigious Good Design Award, this 210 mm Gyuto is the standard by which many other entry-level professional Japanese knives are measured.
Engineered for Balance and Durability
The blade is constructed from a VG10 (Cobalt Alloy) Core for superior edge retention, clad in softer 13-Chrome Stainless Steel for durability and ease of sharpening. This 3-layer laminated construction ("Warikomi") allows the hard core to cut effectively while the softer outer layers protect it from brittleness.
The handle is made from Reinforced Laminated Material (Eco-Wood / Pakkawood), which is highly resistant to water and deformation compared to natural wood. It is secured with three rivets and features a stainless steel bolster (ferrule) that seamlessly connects the blade to the handle, preventing food particles from accumulating and improving balance.
