Traditional Mastery: The Tojiro Shippu Black Nakiri
For the chef who values traditional aesthetics as much as cutting performance, the Tojiro Shippu Black Nakiri (FD-1598) offers a sophisticated evolution of the classic vegetable cleaver. The "Shippu Black" series distinguishes itself with a dark, oxidized finish on the blade, designed not only for visual impact but also to improve corrosion resistance and food release. This 165 mm double-beveled Nakiri is engineered for vertical chopping and push-cutting, making it the definitive tool for processing vegetables with speed and precision.
Engineered for Dark Elegance and Agility
The blade features a high-performance VG10 (Cobalt Alloy) Core, clad in Damaascus Steel layers. This construction is treated with a black oxide finish that highlights the ripple pattern ("Kasumi") of the Damascus cladding. The handle is crafted from Chestnut Wood (specifically "burnt" or dark-stained chestnut to match the blade), a material prized in Japan for its resistance to rot and moisture. It is fitted with a durable Polypropylene Resin Collar (Ferrule) to ensure the blade remains securely seated while keeping the overall weight exceptionally low for fatigue-free use.
