Precision Fabrication: The ICEL Tradição Professional Wide Boning Knife
Processing larger primal cuts and heavy proteins requires a blade that offers more structural rigidity and surface area than a standard narrow boning knife. The ICEL 18 cm Tradição Wide Boning Knife is engineered for the heavy-duty deboning of beef, pork, and larger game. Its wider blade profile provides enhanced stability when making deep initial cuts and navigating around large skeletal structures, while the 18 cm length offers the reach necessary for thick-muscled sections where precision and power must be balanced.
Crafted for Durability and Natural Ergonomics
The foundation of this professional tool is an 18 cm blade forged from high-carbon X50CrMoV15 stainless steel, tempered to 56 HRC. The wide geometry prevents the blade from bowing under the lateral pressure often required during commercial butchery. The handle is crafted from Natural Rosewood, a premium hardwood valued for its high density and natural moisture resistance.
Secured with three robust stainless steel rivets, the handle provides a secure, weighted grip that ensures balance during repetitive, high-force tasks. Due to the organic nature of the wood, this knife must be hand-washed and dried immediately to maintain the handle’s integrity and finish.
